Sample Menu

• Fresh tuna timbale – Fresh tuna timbale with peanut oil, on top of cucumber, avocado, mango, and caramelized onion.
• Pair of pork tacos. – Pair of seasoned pork tacos in tamarind reduction, cured radish, cilantro sprouts.
• Filet mignon sautéed with rosemary-aged butter, – filet mignon sautéed with rosemary-aged butter, over sweet potato purée, beef demi-glace, rain of grasshoppers and chicatana ant.
• Mini tamale of tender corn – Mini tamale of tender corn, served with homemade dulce de leche ice cream and coconut sugar soil.
• Watermelon flambé with cognac – Watermelon flambé with cognac, arugula and fresh lettuce, goat cheese, seeds and honey mustard dressing with fresh peppers.
